On stage, Louis-Olivier Mauffette embodied more than 20 roles under the direction of eccentric directors like Jacques Rossi, Un simple soldat (TDP), Martin Genest, Octobre 70 (Théâtre Blanc), Michèle Deslauriers, Devinez qui? (La Comédie humaine) an Justin Larramée, Transmissions (La Licorne). He was part of the distribution of the show Notre petite ville, on tour everywhere in Quebec, of Sébastien Dodge’s play Televizione (Théâtre de Quat’sous). He also played a big part in the success of the play for teenagers On t’aime Mickaël Gouin, on the stage of the Théâtre des Cascades, directed by Dominic Quarré and then on the roads of Quebec. He was also part of the cast of L'embardée directed by Jean-Simon Traversy and of Silence, on tourne!, under the direction Charles Dauphinais (Théâtre Gilles Vigneault and on tour).

On the small screen, he lands roles in Les invincibles,Unité 9, Toute la vérité, Olivier, O', L'Échappée, Caméra Café 2.0., Sans Rendez-Vous and L’Oeil du cyclone. He embodied the characters of Sansouci and Oncle Phil in the popular children’s show L’appart du 5e. Louis-Olivier made his mark in the series and web-series Papa I et II, written and directed by Jonathan Roberge, in addition to playing the lead of Gazébo, the web series he co-wrote and was nominated at the 2022 Gémeaux Gala for "Best writing for a show or series produced for digital media".
